Love pumpkin pie, but not the hard labor required to produce that calorie-laden crust? Liddon has a healthy, lip-smacking solution in this warm pumpkin pie drink. “The secret to making the perfect hot drink is the combination and amount of spices and other flavors,” she says. “You don’t want any one ingredient to overpower the drink.”
1 carton (946ml) almond milk or milk of choice
1 15-oz can pureed pumpkin
1 TBSP pumpkin pie spice
(or 2 tsp cinnamon, 1/2 tsp each nutmeg and ginger)
1 TBSP pure vanilla extract
1/2 C maple syrup or other sweetener, or to taste
Bourbon (optional)
Serves four. In a medium-sized pot, whisk together all ingredients to taste. Heat for a few minutes, stirring frequently. Stir in bourbon if desired. Serve with a sprinkle of cinnamon.
