Coconut Spice Latte

For the coconut spice latte, Liddon uses coconut milk, which despite its rich, sweet taste has many nutritional benefits. It’s high in B vitamins, protein, zinc, phosphorus and iron. You can buy it in a can or in the dairy fridge at most grocery stores.
Serves four:
4 C water
6-8 chai spice tea bags
1 can coconut milk or 2 C milk of choice
6 TBSP sugar, or to taste
Spiced rum, to taste (optional)
Cinnamon, to garnish
In a medium-sized pot, bring 4 cups of water to a boil. Add chai tea bags and allow it to steep for 10 minutes. Remove tea bags and add in the rest of the ingredients except the rum, whisking until smooth. Heat for a few minutes, stirring frequently. Stir in rum if desired and serve with a sprinkle of cinnamon.
